Thai peanut Tofu Salad-
This dish was so delicious and so simple to make! If your not a big fan of tofu feel free to substitute the protein source! Excellent meal for lunch, dinner, and even meal prepping! It can be stored up 3 days tops in the fridge!
Ingredients
1. 1 package of firm tofu (generic brand)
2. 3 Cups of of spring mix
3. 2 roma tomatoes
4. 1 tablespoon of sesame seeds
5. 3 tablespoons of tamari sauce or thai peanut sauce
6. 1 Tablespoon of Coconut oil or Nutiva Garlic Coconut oil
7. 1 cup of shredded purple cabbage
8. 2 table spoons of Apple cider vinegar
9. 1 lemon squeezed
10. Mrs. Dash Salt-fee seasoning
Directions
Prep: 5 mins Cook time: 15 mins Servings: 2-3
1. First prepare all vegetables to desired consistency and set aside in one big mixture bowl.
2. Heat skillet over medium heat and place 1 tablespoon of coconut oil in the skillet and let melt.
3. Place tofu and 2 tablespoons of Tamari along with sesame seeds then stir fry until tofu is golden brown. (optional throw in a teaspoon of ground tumeric seasoning.
4. Lastly, prepare dressing by combining apple cider vinegar, lemon (squeezed), tamari, and Mrs. dash seasoning in a small bowl. Mix well and set aside.
5. Once tofu is browned place over salad mixture and then serve with dressing!
